Food on Film - Bubba Gump Shrimp Cocktail

Barbecue shrimp. Boiled shrimp. Broiled shrimp. Baked shrimp. Sautéed shrimp. Shrimp kebabs. Shrimp Creole. Shrimp gumbo. Pan-fried shrimp. Deep-fried shrimp. Stir-fried shrimp. Pineapple shrimp. Lemon shrimp. Coconut shrimp. Pepper shrimp. Shrimp soup. Shrimp stew. Shrimp salad. Shrimp n’ potatoes. Shrimp burgers. Shrimp sandwich. ‘Yep, that’s, that’s about it explains Benjamin Buford ‘Bubba’ Blue the slow-witted friend of Forrest Gump in the movie of the same name. No Bubba it is not. You forgot the Shrimp cocktail. So here’s how you make it. Keep it simple, just like Forrest.

Serves 4 

  • 150g mayonnaise 

  • 100g tomato ketchup 

  • 1 tbsp. Worcestershire sauce

  • A few drops of Tabasco

  • Juice of ½ a lemon

  • Pinch of cayenne pepper

  • Salt & pepper, to taste

  • 400g cooked, shelled, shrimp

  • 1 iceberg lettuce, finely shredded

  • 1 avocado, peeled and diced

Method

  1. Combine the mayo, ketchup, Worcestershire sauce, lemon juice, cayenne together in a bowl and season with the salt and pepper. Add the shrimp to the bowl and stir to coat. 

To serve; 

  1. Divide the lettuce between 4 glasses. Top each with the avocado and then top each again with the shrimp mix. Garnish with a slice of lemon. And that’s all I have to say about that.
